4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

Optional: 1 teaspoon smoked paprika for extra flavor

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally until the kernels are charred and tender. Remove from the grill and allow to cool.

    Prepare the Corn: Once the corn is cool enough to handle, carefully cut the kernels off the cobs into a large mixing bowl.

      Mix in Ingredients: Add the diced avocados, chopped red onion, halved cherry tomatoes, minced jalapeño, and chopped cilantro to the bowl with the corn.

        Dress the Salsa: In a small bowl, whisk together the lime juice, olive oil, smoked paprika (if using), and salt and pepper to taste. Pour this dressing over the corn mixture and toss gently to combine without mashing the avocados.

          Taste and Adjust: Taste the salsa and adjust seasoning if necessary, adding more lime juice or salt as desired.

            Chill and Serve: Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld. Serve with tortilla chips, on top of grilled fish or chicken, or as a fresh topping for tacos.
