Grilled Corn Pasta Salad

8 ounces of fusilli or penne pasta

2 ears of fresh corn, husked

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside to cool.

    Grill the Corn: While the pasta is cooking, preheat your grill to medium-high heat. Place the husked corn directly on the grill and cook, turning occasionally, until charred and cooked through (approximately 10-12 minutes). Remove from the grill, let cool slightly, then slice the kernels off the cobs into a bowl.

      Prepare the Vegetables: In a large mixing bowl, combine the grilled corn kernels, diced red bell pepper, cherry tomatoes, cucumber, red onion, and fresh basil.

        Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust the seasoning to taste if needed.

          Combine Everything: Once the pasta has cooled, add it to the bowl with the vegetables. Pour the dressing over the pasta and vegetables, and toss gently to combine. If you're using feta cheese, sprinkle it on top and fold it in carefully.

            Chill and Serve: Let the salad sit for at least 15 minutes to allow the flavors to meld. Alternatively, you can chill it in the refrigerator for up to 2 hours before serving.
