Grilled Peach & Burrata Salad

Ingredients
  

2 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups arugula or mixed greens

1/4 cup balsamic glaze

1/4 cup extra-virgin olive oil

1/4 cup toasted pistachios, roughly chopped

A handful of fresh basil leaves

Salt and pepper to taste

Optional: a pinch of red pepper flakes for heat

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

    Prepare the Peaches: While the grill is heating, wash the peaches and slice them in half. Carefully remove the pit.

      Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 4-5 minutes or until grill marks appear and the peaches are slightly softened. Turn them over and grill for an additional 1-2 minutes, then remove from the grill. Allow to cool slightly.

        Arrange the Greens: In a large serving platter or bowl, arrange the arugula or mixed greens as the base for your salad.

          Add Burrata: Gently tear the burrata cheese into smaller pieces and distribute them over the greens.

            Place Grilled Peaches: Once cooled, add the grilled peach halves to the greens and burrata arrangement, spacing them evenly.

              Season and Dress: Drizzle the balsamic glaze and olive oil over the entire salad. Season with salt, pepper, and the optional red pepper flakes.
