Grilled Peach & Chicken Caprese Melts

Ingredients
  

2 ripe peaches, halved and pitted

2 boneless, skinless chicken breasts

4 oz fresh mozzarella cheese, sliced

1 cup cherry tomatoes, halved

1 cup fresh basil leaves

2 tbsp balsamic glaze

2 tbsp olive oil

1 tsp garlic powder

Salt and black pepper, to taste

4 slices of ciabatta or sourdough bread

1 tbsp butter, softened for grilling

Instructions
 

Prepare the Chicken: Season the chicken breasts with olive oil, garlic powder, salt, and pepper. Heat a grill pan over medium-high heat and grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing thinly.

    Grill the Peaches: While the chicken is resting, place the peach halves on the grill, cut side down. Grill for about 3-4 minutes until grill marks appear. Remove from heat and cut into slices.

      Assemble the Melts: On one slice of bread, layer slices of grilled chicken, fresh mozzarella, grilled peaches, and cherry tomatoes. Add a few basil leaves on top and drizzle with balsamic glaze. Top with another slice of bread.

        Grill the Sandwiches: Heat a pan over medium heat and butter the outside of the sandwiches. Place the sandwiches in the pan and grill for about 4-5 minutes on each side until the bread is golden brown and the cheese is melting.

          Serve: Slice the melts in half and serve immediately, drizzled with a little extra balsamic glaze and garnished with remaining basil leaves.
