Grilled Salmon with Pineapple Salsa

4 salmon fillets (around 6 ounces each)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon chili powder (optional for heat)

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red bell pepper, finely chopped

½ small red onion, finely chopped

1 jalapeño, seeds removed and minced (optional)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, paprika, salt, black pepper, chili powder (if using), and lime juice.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they're well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Make the Pineapple Salsa: In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Mix well and let it sit to allow the flavors to meld while you grill the salmon.
