1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper, to taste

Juice of 1 lime

For the Avocado Corn Salsa:

1 ripe avocado, diced

1 cup fresh corn kernels (or frozen, thawed)

1 small red onion, finely chopped

1 small jalapeño, seeded and finely chopped (optional for spice)

½ cup cherry tomatoes, halved

1 tablespoon fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Creamy Sauce:

½ cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

½ teaspoon cumin

Salt and pepper, to taste

To Serve:

2 cups cooked quinoa or brown rice

Lime wedges and fresh cilantro for garnish

Marinate the Shrimp: In a bowl, combine the olive oil, minced garlic, paprika, cayenne pepper, lime juice, salt, and pepper. Add the shrimp and toss to coat. Allow marinating for at least 15-30 minutes.
