Ingredients

1 lb salmon fillet, skinless and cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon grated fresh ginger

1 tablespoon rice vinegar

1/4 teaspoon black pepper

1 bell pepper, cut into 1-inch squares (any color)

1 medium red onion, cut into 1-inch pieces

1 cup pineapple chunks (fresh or canned)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, mirin, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper until well combined.

Marinate the Salmon: Place the salmon cubes in a resealable plastic bag or a shallow dish. Pour half of the marinade over the salmon, ensuring it is well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Prepare the Vegetables: In a separate bowl, combine the bell pepper, red onion, and pineapple chunks. Drizzle the remaining marinade over the vegetables and gently toss to coat.

Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated salmon cubes, bell peppers, red onions, and pineapple chunks alternately onto the skewers, so each skewer has a mix of ingredients.

Grill the Skewers: Place the skewers on the preheated grill. Cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks. (Be cautious not to overcook the salmon, as it cooks quickly.)

Serve: Remove skewers from the grill and let them rest for a couple of minutes. Serve warm with extra teriyaki sauce, if desired, and garnish with sesame seeds and chopped green onions.

Enjoy: Pair your grilled teriyaki salmon skewers with steamed rice or a fresh green salad for a complete meal.
