Grilled Tomato Sandwiches

4 slices of sourdough bread or your choice of artisan bread

1 cup fresh mozzarella cheese, sliced

2 medium ripe tomatoes, sliced

1/4 cup fresh basil leaves

2 tablespoons basil pesto (store-bought or homemade)

2 tablespoons olive oil

Salt and pepper to taste

Optional: Balsamic glaze for drizzling

Prepare the Bread: Start by brushing one side of each slice of bread with olive oil. This will help the sandwiches achieve a golden and crispy crust when grilled.

    Assemble the Sandwiches: On the un-oiled side of two slices of bread, spread a tablespoon of basil pesto evenly. Layer sliced mozzarella cheese followed by sliced tomatoes on top. Sprinkle with salt and pepper to taste. Add a few fresh basil leaves for extra flavor.

      Top It Off: Place the remaining slices of bread on top, oiled side up, to create a complete sandwich.

        Preheat the Grill or Pan: Heat a grill pan or skillet over medium heat. If you have a panini press, you can use that for a more uniform pressing.

          Grill the Sandwiches: Place the sandwiches on the grill or skillet. Cook for about 4-5 minutes on one side until golden brown. Carefully flip the sandwiches and grill the other side for an additional 4-5 minutes. The cheese should be melted, and the bread should be crusty.

            Serve: Remove from heat, and if desired, drizzle with balsamic glaze. Let the sandwiches rest for a minute before slicing in half. Serve warm with a side of mixed greens or your favorite chips.
