Grilled Veggie & Pesto Sandwich

Ingredients
  

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 small eggplant, sliced into rounds

1 cup mushrooms, sliced

4 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried oregano

1 teaspoon garlic powder

8 slices of whole-grain bread

½ cup pesto (store-bought or homemade)

1 cup fresh spinach

1 cup fresh mozzarella cheese, sliced

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat on the stovetop.

    Prepare the Veggies: In a large bowl, combine zucchini, bell pepper, eggplant, and mushrooms. Drizzle with 3 tablespoons of olive oil, and add salt, pepper, oregano, and garlic powder. Toss until veggies are evenly coated.

      Grill the Vegetables: Place the vegetables on the grill. Cook each side for about 4-5 minutes or until they are tender and grill marks appear. Remove from the grill and set aside.

        Assemble the Sandwich: Lightly brush one side of each slice of bread with the remaining tablespoon of olive oil. On the unbrushed side, spread a generous amount of pesto, layer with grilled vegetables, fresh spinach, and slices of mozzarella cheese. Top with another slice of bread, pesto-side down.

          Grill the Sandwiches: Place the sandwiches on the hot grill or grill pan. Cook for about 4-5 minutes on one side until golden brown and crispy. Carefully flip and grill the other side for another 4-5 minutes or until the cheese is melted and the bread is golden brown.

            Serve: Remove from the grill and let cool slightly. Drizzle with balsamic glaze if desired, slice in half, and serve warm.
