Grilled Veggie Quinoa Bowls

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 red bell pepper, sliced

1 zucchini, sliced

1 yellow squash, sliced

1 cup cherry tomatoes, halved

1 red onion, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup feta cheese, crumbled (optional)

Fresh parsley for garnish

Juice of 1 lemon

Cook the Quinoa: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

    Prepare the Vegetables: While the quinoa is cooking, preheat your grill (or grill pan) to medium-high heat. In a large bowl, combine the sliced red bell pepper, zucchini, yellow squash, cherry tomatoes, and red onion. Drizzle with olive oil, and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss until the veggies are well coated.

      Grill the Veggies: Once the grill is hot, add the seasoned vegetables. Grill for about 5-7 minutes, turning occasionally, until they are slightly charred and tender. Remove from heat and set aside.

        Assemble the Bowls: In individual serving bowls, start by adding a generous scoop of the cooked quinoa. Top with the grilled vegetables. If desired, sprinkle crumbled feta cheese on top for extra flavor.

          Finish with Lemon & Garnish: Squeeze fresh lemon juice over each bowl and garnish with chopped fresh parsley.
