Grilled Zucchini and Halloumi

2 medium zucchinis, sliced into ½-inch rounds

8 oz halloumi cheese, sliced into ½-inch thick pieces

3 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh mint leaves, for garnish

Lemon wedges, for serving

Instructions
 

Marinate the Zucchini: In a bowl, mix 2 tablespoons of olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Add the zucchini slices to the bowl and gently toss to coat. Let them marinate for at least 15 minutes.

    Prep the Halloumi: While the zucchini is marinating, brush the halloumi slices with the remaining 1 tablespoon of olive oil on both sides.

      Preheat the Grill: Heat your grill or grill pan over medium-high heat until hot.

        Grill the Zucchini: Place the marinated zucchini slices on the grill and cook for 3-4 minutes on each side, or until they have nice grill marks and are tender. Remove them from the grill and set aside.

          Grill the Halloumi: Place the oiled halloumi slices on the grill. Grill for about 2-3 minutes on each side, or until golden brown and slightly softened. Be mindful, as halloumi can become overly melty if left on too long.

            Assemble the Dish: On a serving platter, arrange the grilled zucchini and halloumi slices artfully. Drizzle any remaining marinade over the top.

              Garnish and Serve: Sprinkle fresh mint leaves over the dish for a pop of color and flavor. Serve with lemon wedges on the side for an extra tangy finish.
