1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

2 tbsp all-purpose flour

1 cup beef broth

1 cup sour cream

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and sauté for another minute until fragrant.

    Cook the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 7-10 minutes. Drain excess fat if necessary.

      Add the Mushrooms: Once the beef is cooked, stir in the sliced mushrooms. Cook for an additional 5 minutes, allowing the mushrooms to soften and release their juices.

        Make the Roux: Sprinkle the flour over the mixture and stir well to coat the beef and mushrooms. Cook for 2 minutes to eliminate the raw flour taste.

          Create the Sauce: Gradually pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a gentle simmer and cook until it thickens, about 5 minutes.

            Finish with Creaminess: Reduce the heat to low and stir in the sour cream, Worcestershire sauce, Dijon mustard, and paprika. Season with salt and pepper to taste. Allow it to heat through but do not boil to prevent curdling.
