Ingredients

1 ½ cups rolled oats

1 cup unsweetened almond milk (or any milk of choice)

1 ripe banana, mashed

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

1 ½ cups fresh raspberries (or frozen, if out of season)

Optional toppings: chopped nuts, yogurt, or a sprinkle of coconut flakes

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners for easy removal.

Combine Dry Ingredients: In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well to ensure even distribution of the leavening agent and spices.

Mix Wet Ingredients: In another bowl, whisk together the almond milk, mashed banana, honey (or maple syrup), and vanilla extract until well combined.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients, stirring until everything is thoroughly mixed. Be careful not to overmix; a few lumps are okay.

Fold in Raspberries: Gently fold in the raspberries, being cautious not to break them too much to maintain their shape and tartness.

Fill the Muffin Tin: Evenly distribute the oat mixture into the prepared muffin tin, filling each cup about ¾ full.

Bake: Bake in the preheated oven for 20 to 25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

Cool and Serve: Allow the oat cups to cool in the pan for about 10 minutes before transferring them to a wire rack. Enjoy them warm or at room temperature, and top with your favorite toppings if desired!
