2 slices of sourdough bread

1 tablespoon unsalted butter, softened

2 large eggs

1/4 cup Hatch green chilies, diced (fresh or roasted)

1/2 cup shredded sharp cheddar cheese

1/4 cup crumbled feta cheese

1/4 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Prepare the Filling: In a small bowl, combine the diced Hatch chilies, shredded cheddar cheese, crumbled feta, smoked paprika, salt, and pepper. Mix well and set aside.

    Cook the Eggs: In a skillet, heat a drizzle of olive oil over medium heat. Crack the eggs into the skillet, and season with a pinch of salt and pepper. Cook to your desired doneness (sunny-side up or scrambled), and set aside.

      Assemble the Sandwich: Spread the softened butter on one side of each slice of sourdough bread.
