1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 can (4 oz) diced Hatch green chiles

2 cups frozen tater tots

1 cup shredded cheddar cheese

1 cup sour cream

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned and crumbled, about 5-7 minutes. Drain any excess fat.

      Add Vegetables: Stir in the diced onion and minced garlic. Sauté for an additional 3-4 minutes until the onion is translucent.

        Combine Ingredients: Add the black beans, diced tomatoes with green chiles, diced Hatch green chiles, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine and let it simmer for about 5 minutes, allowing the flavors to meld.

          Assemble the Casserole: In a 9x13 inch baking dish, spread the meat mixture evenly across the bottom. Spread the sour cream over the meat, then layer the frozen tater tots on top in an even layer.

            Add Cheese: Sprinkle the shredded cheddar cheese generously over the tater tots.
