1 pound ground turkey

2 cups cooked jasmine rice

1 cup roasted Hatch green chilies, diced (or canned if out of season)

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

½ cup diced onion

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

4 large lettuce leaves (for wraps) or 4 large tortillas (your choice)

½ cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.

    Brown the Meat: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 7-10 minutes.

      Season the Mixture: Stir in the diced Hatch green chilies, black beans, corn, cumin, smoked paprika, salt, and black pepper. Mix well and allow to heat for another 3-4 minutes, ensuring everything is evenly combined and heated through.

        Prepare the Wraps: If using large tortillas, warm them in a dry skillet for a minute on each side or microwave for a few seconds to make them pliable. If using lettuce leaves, wash and pat dry.

          Assemble: Place about ½ cup of the turkey mixture onto each tortilla or lettuce leaf. If desired, sprinkle with shredded cheddar cheese and chopped cilantro for added flavor.

            Roll it Up: For tortillas, fold in the sides and roll tightly from the bottom up. If using lettuce, simply fold the leaves over the filling to enclose.

              Serve: Cut the wraps in half for easier handling. Serve with lime wedges and any additional toppings like salsa or guacamole on the side.
