1/2 cup milk

1 cup shredded cheddar cheese

1 cup diced hatch green chilies (roasted and peeled)

1/2 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Salsa for serving (optional)

Prepare the Filling: In a large mixing bowl, whisk together the eggs and milk until smooth. Stir in the roasted hatch green chilies, diced onion, garlic powder, cumin, and half of the cheddar cheese. Season with salt and pepper to taste.

    Cook the Egg Mixture: In a large skillet, heat olive oil over medium heat. Pour the egg mixture into the skillet. Cook, stirring gently with a spatula, until the eggs are scrambled but still slightly creamy, about 5-7 minutes.

      Assemble the Burritos: Lay the flour tortillas on a flat surface. Spoon an equal amount of the scrambled egg mixture onto the center of each tortilla. Top with the remaining cheddar cheese.
