For the Danish Dough:

2 cups all-purpose flour

1/4 cup granulated sugar

1/2 tsp salt

1 packet (2 1/4 tsp) instant yeast

1/2 cup milk, warmed (110°F)

1 large egg

1/2 cup unsalted butter, cold and cubed

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 large egg yolk

For the Pineapple Topping:

1 cup crushed pineapple, drained

2 tbsp brown sugar

1 tbsp cornstarch

1 tsp vanilla extract

1/2 tsp cinnamon

For the Glaze:

1/2 cup powdered sugar

1-2 tbsp milk

Prepare the Dough: In a large mixing bowl, whisk together the flour, granulated sugar, salt, and instant yeast. In a separate bowl, combine the warmed milk and egg, then add to the dry ingredients. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Knead briefly until the dough comes together. Cover and let rise in a warm place for about 1 hour or until doubled in size.

    Make the Cheesecake Filling: In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add the egg yolk and mix thoroughly until fully combined. Set aside.

      Prepare the Pineapple Topping: In a small saucepan, combine the drained crushed pineapple, brown sugar, cornstarch, vanilla extract, and cinnamon. Cook over medium heat until the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

        Shape the Danish: Preheat your oven to 375°F (190°C). Once the dough has risen, turn it out onto a lightly floured surface and roll it into a rectangle (about 12x18 inches). Cut the dough into 6 squares. Take each square and make a shallow cut along the edges to create a border.

          Assemble the Danishes: Place a spoonful of the cheesecake filling in the center of each square, followed by a spoonful of the pineapple topping. Fold the corners of each square towards the center, but do not seal—leave the center exposed to show the filling.

            Bake: Transfer the assembled danishes to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.

              Make the Glaze: While the danishes are baking, prepare the glaze by whisking together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk or sugar as needed.
