Ingredients

8 ounces elbow macaroni

1 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup diced celery

1/2 cup diced carrots

1/2 cup sweet pickle relish

1/4 cup finely chopped red onion

1/2 cup diced ham (optional)

1/2 cup diced pineapple (fresh or canned, drained)

1/4 cup chopped green onions (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth and well combined.

Combine Ingredients: Add the cooked macaroni, diced celery, diced carrots, sweet pickle relish, red onion, and diced ham (if using) to the bowl with the dressing. Stir gently to combine, ensuring that the macaroni and veggies are thoroughly coated.

Add Pineapple: Fold in the diced pineapple carefully, preserving the chunks for a burst of flavor in every bite.

Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours to allow the flavors to meld together. This salad can be made a day in advance for even better flavor.

Serve: Just before serving, give the salad a good stir, taste, and adjust seasoning if necessary. Garnish with chopped green onions. Serve chilled and enjoy your Hawaiian Macaroni Salad!
