Healthy Chickpea Salad Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup Greek yogurt (plain, can substitute with a vegan option)

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

1/2 cup diced cucumber

1/2 cup diced bell pepper (any color)

1/4 cup chopped red onion

1/4 cup freshly chopped parsley or cilantro

4 large whole grain or spinach tortillas

Optional: sliced avocado and mixed greens for serving

Instructions
 

In a large mixing bowl, add the drained and rinsed chickpeas. Using a fork or a potato masher, mash them gently until chunky, leaving some whole for texture.

    In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic powder, onion powder, cumin, salt, and pepper until well combined.

      Pour the yogurt mixture over the mashed chickpeas and fold in gently until fully incorporated.

        Add the diced cucumber, bell pepper, red onion, and chopped herbs to the chickpea mixture. Stir gently to combine all the ingredients, adjusting the seasoning if necessary.

          Lay out each tortilla and spoon an equal amount of the chickpea salad mixture onto the center of each.

            If using, top with slices of avocado and a handful of mixed greens for added texture and nutrition.

              To wrap, fold in the sides of the tortilla over the filling, then roll from the bottom up tightly until fully enclosed.

                Serve immediately or wrap in foil for a nutritious on-the-go meal.
