Ingredients
  

1 cup fresh figs, chopped

2 cups mixed greens (spinach, arugula, and kale)

1 cup cooked quinoa

1/2 cup crumbled feta cheese (or a dairy-free option)

1/4 cup walnuts, chopped

1/4 cup dried cranberries

1/4 cup fresh mint, chopped

3 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Instructions
 

Prepare the Fig Jam:

    - In a small saucepan over medium heat, combine the chopped figs, 1 tablespoon of olive oil, and a pinch of salt. Cook for about 5-7 minutes until the figs break down and become jam-like.

      - Remove from heat and let it cool slightly. If desired, mash with a fork for a smoother consistency.

        Cook the Quinoa:

          - Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then cover and reduce heat to low for 15 minutes, or until all water is absorbed. Fluff with a fork and let cool.
