4 cloves of garlic, minced

1 medium onion, diced

3 cups vegetable broth

1 cup milk (or unsweetened almond milk for a dairy-free option)

1 cup sharp cheddar cheese, shredded

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Optional garnishes: fresh chives, additional cheddar cheese, or croutons

Instructions
 

Sauté Aromatics: In a large pot over medium heat, warm the olive oil. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
