Healthy Oatmeal Banana Cookies

Ingredients
  

2 ripe bananas, mashed

1 cup rolled oats (gluten-free if desired)

1/2 cup almond flour (or any flour of your choice)

1/4 cup honey or pure maple syrup

1/4 cup unsweetened nut butter (peanut, almond, or sunflower seed butter)

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/3 cup dark chocolate chips or raisins (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed bananas, almond flour, honey (or maple syrup), nut butter, and vanilla extract. Mix well until smooth.

      In another bowl, combine the rolled oats, baking soda, salt, and ground cinnamon. Stir well to combine these dry ingredients.

        Gradually add the dry mixture to the wet mixture, stirring until the ingredients are well incorporated. If desired, fold in the chocolate chips and chopped nuts at this stage.

          Use a tablespoon or cookie scoop to drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.

            Flatten each cookie slightly with the back of the spoon, as they won't spread much during baking.

              Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

                Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
