Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 cup mushrooms, chopped

1 carrot, grated

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (adjust based on spice preference)

Salt and pepper, to taste

1 head of butter or romaine lettuce, leaves separated and washed

1/4 cup green onions, sliced (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and ginger, cooking for an additional 1 minute until fragrant.

Cook Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

Add Vegetables: Stir in the diced bell pepper, chopped mushrooms, and grated carrot. Cook for another 3-4 minutes until the vegetables soften.

Flavor it Up: Pour the soy sauce, sesame oil, rice vinegar, and sriracha into the mixture. Stir to combine, letting everything cook together for an additional 2-3 minutes. Season with salt and pepper to taste.

Assemble the Wraps: Spoon the turkey mixture into the center of each lettuce leaf. Use fresh green onions and sesame seeds as a garnish for added flavor and crunch.

Serve: Enjoy your healthy turkey lettuce wraps immediately while they’re fresh and crisp!
