1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

1 cup frozen peas

For the Dumplings:

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup milk

3 tablespoons unsalted butter, melted

1 tablespoon chopped fresh parsley (for garnish)

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the cubed chicken thighs, season with salt and pepper, and cook for about 4-5 minutes until lightly browned. Remove chicken and set aside.

    Cook the Veggies: In the same pot, add onions, carrots, and celery. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and cook for another minute until fragrant.

      Make the Sauce: Return the chicken to the pot. Pour in the chicken broth, and add thyme, parsley, and more salt and pepper, to taste. Bring to a gentle simmer and cook for 10 minutes, allowing flavors to meld.

        Prepare Dumpling Batter: In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually stir in the milk and melted butter until just combined. Be careful not to over-mix; it should be a thick but sticky dough.

          Cook Dumplings: Using a spoon, drop heaping tablespoons of the dumpling batter into the simmering chicken mixture. Ensure they are spaced apart slightly. Cover the pot with a lid and let cook for 10 minutes without lifting the lid. This steams the dumplings to fluffy perfection.
