Hearty Lentil and Potato Soup

1 cup green or brown lentils, rinsed and drained

2 medium potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes with juice

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the onions are translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add the Spices: Sprinkle in the ground cumin, dried thyme, salt, and pepper, stirring continuously for about 30 seconds to allow the spices to bloom.

      Combine the Ingredients: Add the rinsed lentils, diced potatoes, diced tomatoes with juice, vegetable broth, and bay leaf to the pot. Stir well to combine all the ingredients.

        Bring to a Boil: Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.

          Simmer: Allow the soup to simmer for about 30-35 minutes, or until the lentils and potatoes are tender. Stir occasionally, adding more broth or water if the soup becomes too thick.

            Adjust the Flavor: Once cooked, taste the soup and adjust the seasoning with more salt, pepper, or spices as desired. Remove the bay leaf before serving.

              Serve: Ladle the hearty soup into bowls and garnish with fresh parsley. Serve with lemon wedges on the side to add a vibrant, zesty flavor when squeezed over the soup.
