1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, sliced

2 celery stalks, chopped

1 bell pepper (any color), diced

1 medium zucchini, chopped

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

Fresh parsley or cilantro, for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the garlic, carrots, and celery, and cook for another 5 minutes until they start to soften.
