Hearty Turkey and Sweet Potato Skillet Dinner

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent.

    Sauté the Vegetables: Add the minced garlic and diced bell pepper to the skillet and sauté for another 2-3 minutes until softened.

      Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with smoked paprika, cumin, chili powder, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are fork-tender.

        Add the Turkey: Push the sweet potatoes to the side of the skillet. In the empty space, add the ground turkey. Break it up with a spatula and cook until browned and cooked through, about 5-7 minutes.

          Combine Ingredients: Once the turkey is cooked, stir in the corn and black beans. Mix everything together and let it cook for another 3-4 minutes until heated through.

            Adjust Seasoning: Taste and adjust the seasoning with additional salt, pepper, or spices if needed.

              Serve: Remove from heat and garnish with fresh cilantro. Serve warm with avocado slices and lime wedges on the side for an extra burst of flavor.
