Hearty Vegetable and Lentil Soup

Ingredients
  

1 cup green or brown lentils, rinsed

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

1 medium zucchini, diced

1 cup diced tomatoes (canned or fresh)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

6 cups vegetable broth

2 cups spinach or kale, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent (about 5 minutes).

    Add Vegetables: Stir in the carrots, celery, and bell pepper. Cook for another 5 minutes, allowing the vegetables to soften.

      Incorporate Lentils & Spices: Add the rinsed lentils, diced tomatoes, thyme, oregano, bay leaf, and a pinch of salt and pepper. Stir well to combine.

        Pour in the Broth: Carefully pour in the vegetable broth. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the lentils are tender.

          Add Greens: In the last 5 minutes of cooking, stir in the chopped spinach or kale. Taste and adjust seasoning with additional salt and pepper if needed.

            Serve & Garnish: Remove the bay leaf before serving. Ladle the soup into bowls, garnish with fresh parsley, and enjoy warm!
