  • 0.5 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 4 slices rustic bread (sourdough or ciabatta)
  • 2 cups cooked turkey, sliced
  • 1 cup turkey gravy
  • 0.5 cup cranberry sauce (optional)
  • None cups mixed greens (arugula or spinach)
  • None slices provolone cheese (optional)

Instructions
 

  • Make the Herb Butter: In a bowl, combine the softened butter, chopped parsley, rosemary, thyme, garlic powder, lemon zest, salt, and pepper. Mix until all ingredients are well incorporated and the herb butter is smooth. Transfer the herb butter to a piece of parchment paper, roll it into a log shape, and refrigerate for at least 30 minutes to firm up.
  • Prepare the Bread: Preheat a skillet or griddle over medium heat. Spread a generous layer of herb butter on one side of each slice of rustic bread.
  • Assemble the Sandwich: On a slice of bread (butter side down), layer some mixed greens and turkey slices. If using, add a slice of provolone cheese and a spoonful of cranberry sauce for a tart contrast. Top with another slice of bread, butter side up.
