1 cup unsalted butter, softened

2/3 cup powdered sugar

2 cups all-purpose flour

1/4 cup cornstarch

1 tablespoon fresh lemon zest

2 teaspoons fresh thyme leaves, chopped (or 1 teaspoon dried thyme)

1/2 teaspoon salt

1 teaspoon vanilla extract

Optional: extra powdered sugar for dusting

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      Cream the Butter and Sugar:

        In a large mixing bowl, beat the softened butter and powdered sugar together with an electric mixer on medium speed until light and fluffy. This should take about 3-4 minutes.

          Add Flavorings:

            Mix in the lemon zest, chopped thyme, salt, and vanilla extract until well combined.

              Combine Dry Ingredients:

                In a separate bowl, whisk together the all-purpose flour and cornstarch. Gradually add the dry mixture to the butter mixture. Mix on low speed until a soft dough forms.

                  Shape the Dough:

                    Turn the dough out onto a lightly floured surface and shape it into a rectangle, about 1/2 inch thick. You can use a rolling pin or simply flatten it with your hands.

                      Cut the Shortbread:

                        Use a sharp knife or a pizza cutter to cut the dough into squares or rectangles. If you prefer, you can also use cookie cutters for different shapes.

                          Bake:

                            Transfer the shortbread pieces to the prepared baking sheet, spacing them slightly apart. Bake for 12-15 minutes or until the edges are lightly golden. Keep an eye on them, as they can brown quickly.

                              Cool Down:
