Ingredients

1 cup couscous

1 ¼ cups vegetable broth (or water)

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon salt

¼ teaspoon black pepper

½ cup cherry tomatoes, halved

½ cucumber, diced

½ cup bell pepper, diced (any color)

¼ cup red onion, finely chopped

1 cup fresh parsley, chopped

¼ cup fresh mint, chopped

1 avocado, sliced (for serving)

Feta cheese, crumbled (optional)

Extra lemon wedges (for garnish)

Instructions

Cook the Couscous: In a medium pot, bring the vegetable broth (or water) to a boil. Once boiling, add couscous and stir in the salt and olive oil. Cover the pot, remove it from heat, and let it sit for about 5 minutes until the couscous has absorbed all the liquid.

Fluff the Couscous: After 5 minutes, remove the lid and fluff the couscous with a fork. Stir in the lemon zest and lemon juice, mixing well to incorporate the flavors.

Prepare the Vegetables: While the couscous is resting, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large bowl.

Add Fresh Herbs: To the vegetable bowl, add the chopped parsley and mint. Toss everything together to mix the veggies and herbs evenly.

Combine Ingredients: Gently fold the fluffed couscous into the bowl with the diced vegetables and herbs. Season with black pepper and additional salt if needed. Stir until well combined.

Serve: Spoon the herbed lemon couscous into serving bowls. Top with sliced avocado and sprinkle with crumbled feta cheese if desired. Serve with extra lemon wedges on the side for an added zesty kick.
