6 large eggs

1 cup egg whites (about 8 egg whites)

1 cup cooked and crumbled turkey sausage or chicken sausage

1/2 cup black beans, drained and rinsed

1/2 cup diced bell peppers (mix of red and green for color)

1/4 cup diced red onion

1/2 cup shredded low-fat cheese (cheddar or pepper jack)

4 whole wheat tortillas (10-inch)

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Salsa for serving (optional)

Cooking spray or olive oil for the pan

Instructions
 

Prepare Ingredients: Start by prepping all your ingredients. Cook and crumble the turkey or chicken sausage in a large skillet over medium heat. Once browned, remove from the pan and set aside.

    Sauté Vegetables: In the same skillet, add a little cooking spray or olive oil, and toss in the diced bell peppers and red onion. Sauté for about 3-4 minutes until they begin to soften.

      Beat the Eggs: In a large bowl, whisk together the large eggs and egg whites. Season with salt and pepper.

        Cook the Eggs: Pour the egg mixture into the skillet with the vegetables. Cook over medium heat, stirring gently until the eggs are just set. Add in the cooked sausage and black beans, mixing until everything is heated through.

          Add Cheese: Sprinkle the shredded cheese on top of the egg mixture, allowing it to melt slightly before removing the pan from heat.

            Assemble the Burritos: Lay each whole wheat tortilla on a flat surface. Spoon an equal amount of the egg mixture onto the center of each tortilla. Top with a few slices of avocado and a sprinkle of chopped cilantro.

              Wrap the Burritos: Fold in the sides of the tortilla and then roll it tightly from the bottom up, encasing the filling. Repeat for all tortillas.

                Optional - Toast the Burritos: For a crispy finish, you can heat a little oil in a skillet over medium heat and toast the burritos seam-side down for 2-3 minutes until golden brown.

                  Serve: Slice the burritos in half if desired, and serve warm with salsa on the side for dipping.
