1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup green peas (fresh or frozen)

1 cup corn (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (fresh or prepared)

1 cup beef broth

2 tablespoons olive oil

1 cup shredded cheddar cheese (optional for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.

      Cook the Ground Beef: Add the ground beef to the skillet and cook, breaking it apart with a spoon, until it’s browned and cooked through about 5-7 minutes. Drain excess fat if necessary.

        Add Carrots and Peas: Stir in the diced carrots, green peas, and corn to the skillet. Cook for another 4-5 minutes until the vegetables are slightly tender.

          Season the Mixture: Mix in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour in the beef broth and stir well. Let it simmer on low heat for 5 minutes, allowing the flavors to blend.

            Assemble the Shepherd's Pie: In a baking dish (about 9x13 inches), spread the beef and vegetable mixture evenly on the bottom. Carefully spoon the mashed potatoes over the filling, spreading it out to cover completely. You can create swirls on the surface with a fork for texture.

              Add Cheese (Optional): If using, sprinkle the shredded cheddar cheese over the mashed potatoes.

                Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and bubbly.

                  Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley before serving. Scoop out generous portions and enjoy the warm, hearty flavors!
