2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

2 cans (14 ounces each) of crushed tomatoes

3 cups vegetable broth (or chicken broth for non-vegetarians)

1/2 teaspoon sugar

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1 cup heavy cream

1/2 cup fresh basil leaves, chopped (save some for garnish)

Juice of 1 lemon

Grated Parmesan cheese (for serving, optional)

Crusty bread (for serving, optional)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes & Seasonings: Pour in the crushed tomatoes along with the vegetable broth, sugar, dried oregano, salt, and black pepper. Stir well to combine, then bring the mixture to a gentle simmer.

      Simmer: Let the soup simmer uncovered for about 20 minutes, allowing the flavors to meld together. Stir occasionally.

        Blend Soup: After simmering, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, you can blend it to your desired consistency in batches using a countertop blender.

          Add Cream & Basil: Reduce the heat to low, and stir in the heavy cream, chopped basil leaves, and lemon juice. Stir gently just until warmed through; do not boil after adding the cream to maintain its creaminess.

            Taste & Adjust: Taste the soup and adjust seasonings if necessary, adding more salt, pepper, or lemon juice if needed.

              Serve: Ladle the soup into bowls, garnish with additional fresh basil, and sprinkle with grated Parmesan cheese if desired. Serve hot with crusty bread on the side for dipping.
