8 oz elbow macaroni

2 cups fresh broccoli florets

3 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

3 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for breadcrumbs)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour, stirring continuously for about 2 minutes until it forms a paste. Gradually pour in the milk, whisking constantly to avoid lumps. Cook for about 5-7 minutes, until the mixture thickens slightly.

      Add Seasonings: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper to the thickened milk mixture.

        Incorporate the Cheese: Lower the heat and add in the sharp cheddar and mozzarella cheeses, stirring until completely melted and smooth.

          Combine Pasta and Sauce: Carefully fold the cooked macaroni and broccoli into the cheese sauce, ensuring everything is well-coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13-inch baking dish.
