1 ½ lbs ground beef (80/20 blend for flavor)

1 cup breadcrumbs (preferably Italian seasoned)

1 small onion, finely chopped

2 cloves garlic, minced

¼ cup milk

2 eggs

2 tablespoons Worcestershire sauce

1 tablespoon ketchup (plus more for topping)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

For the Mashed Potatoes:

2 lbs Yukon Gold potatoes, peeled and cubed

½ cup unsalted butter

½ cup heavy cream (adjust for desired creaminess)

Salt and pepper to taste

Fresh chives, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, milk, eggs, Worcestershire sauce, ketchup, salt, pepper, and dried thyme. Mix until just combined; avoid overmixing to prevent a tough meatloaf.

      Shape and Bake: Transfer the meat mixture into a loaf pan or shape it into a free-form loaf on a parchment-lined baking sheet. Spread a thin layer of ketchup on top for added flavor. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

        Cook the Mashed Potatoes: While the meatloaf is baking, add the cubed potatoes to a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

          Mash the Potatoes: Add the butter and heavy cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

            Finish and Serve: Once the meatloaf is cooked, let it rest for 10 minutes before slicing. Serve the slices of meatloaf with a generous helping of creamy mashed potatoes. Garnish with fresh chives if desired.
