1.5 lbs (680g) chicken thighs, boneless and skinless

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

2 tablespoons olive oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, and rice vinegar. Mix well. Add the chicken thighs and coat them thoroughly in the marinade. Cover the bowl and refrigerate for at least 30 minutes—an hour is ideal to really develop the flavors.

    Prep for Cooking: Heat olive oil in a large skillet over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and season both sides with salt and pepper.

      Sear the Chicken: Place the chicken thighs in the skillet. Sear each side for about 4-5 minutes until golden brown. You may need to do this in batches if your skillet isn’t large enough.

        Add the Sauce: After all the chicken is seared, pour the reserved marinade into the skillet. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 10 minutes, turning the chicken halfway through. The sauce will thicken slightly, coating the chicken beautifully.

          Final Touch: Remove the skillet from the heat and check the chicken for doneness (it should reach an internal temperature of 165°F or 75°C)—if necessary, cook for a few more minutes.

            Serve: Plate the chicken and drizzle the thickened sauce over the top. Garnish with chopped green onions and a sprinkle of sesame seeds for added crunch and flavor.
