Honey Garlic Shrimp and Rice Bowl

1 lb large shrimp, peeled and deveined

1/2 cup honey

1/4 cup low-sodium soy sauce

2 tablespoons rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons sesame oil

1 tablespoon vegetable oil

2 cups cooked jasmine rice

1 cup broccoli florets

1/2 red bell pepper, thinly sliced

1/4 cup chopped green onions (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Prepare the Shrimp Marinade: In a mixing bowl, combine honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir well until the honey is dissolved completely.

    Marinate the Shrimp: Add the shrimp to the marinade, ensuring they are evenly coated. Cover and let them marinate in the fridge for about 15-20 minutes.

      Cook the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the broccoli florets and red bell pepper. Sauté for about 5 minutes or until they are tender-crisp. Remove the vegetables from the skillet and set aside.

        Sauté the Shrimp: In the same skillet, add sesame oil. Once hot, add the marinated shrimp along with the marinade sauce. Cook for 3-4 minutes, stirring occasionally, until the shrimp turns pink and opaque, and the sauce thickens slightly. Season with salt and pepper to taste.

          Combine Ingredients: Return the sautéed vegetables to the skillet with the shrimp. Toss everything together until the vegetables are heated through and well combined with the shrimp.

            Serve: In serving bowls, place a generous portion of jasmine rice. Top with the honey garlic shrimp and vegetable mixture. Garnish with chopped green onions and sprinkle sesame seeds on top for added crunch.
