Honey Garlic Shrimp with Vegetable Fried Rice

For the Honey Garlic Shrimp:

1 pound large shrimp, peeled and deveined

3 tablespoons honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

1 tablespoon vegetable oil

Salt and pepper to taste

Sliced green onions for garnish

Sesame seeds for garnish

For the Vegetable Fried Rice:

2 cups cooked jasmine rice (preferably day-old)

2 tablespoons vegetable oil

1 small onion, diced

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, bell peppers, and corn)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Chopped fresh cilantro or green onions for garnish

Instructions
 

Prepare the Honey Garlic Sauce:

    - In a bowl, combine honey, minced garlic, soy sauce, sesame oil, and grated ginger. Stir well to blend all the ingredients and set aside.

      Cook the Shrimp:

        - Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

          - Once the oil is hot, add the shrimp. Season with salt and pepper.

            - Sauté for about 2-3 minutes until they turn pink and are almost cooked through.

              - Pour the honey garlic sauce over the shrimp and cook for an additional 2 minutes, stirring frequently until the shrimp are fully cooked and coated in the sauce. Remove from heat and garnish with sliced green onions and sesame seeds.

                Make the Vegetable Fried Rice:

                  - In the same skillet, add the remaining 1 tablespoon of vegetable oil.

                    - Add the diced onion and sauté for 2 minutes until translucent.

                      - Add minced garlic and mixed vegetables; cook for another 2-3 minutes until vegetables start to soften.

                        - Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.

                          - Mix everything together and add the cooked rice. Drizzle soy sauce and oyster sauce (if using) over the rice. Toss everything to combine and heat through, about 3-4 minutes.

                            - Season with salt and pepper to taste and garnish with chopped cilantro or green onions.

                              Serve:

                                - Plate a generous portion of vegetable fried rice and top it with the honey garlic shrimp.
