Ingredients

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Carrots: In a large bowl, whisk together the honey, olive oil, balsamic vinegar, garlic powder, smoked paprika, salt, and black pepper until well combined.

Coat the Carrots: Add the baby carrots to the bowl and toss until they are evenly coated in the honey mixture. Allow them to marinate for at least 30 minutes to enhance the flavors.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F). If you prefer to use a grill pan, heat it over medium heat on the stovetop.

Grill the Carrots: Place the marinated carrots directly on the grill or in the grill pan. Grill for about 8-10 minutes, turning them halfway through, until they are tender and have nice grill marks. Avoid letting them become too charred.

Glaze with Remaining Marinade: In the last 2 minutes of grilling, brush the remaining marinade over the carrots for extra flavor and a beautiful glaze.

Serve: Remove the carrots from the grill and transfer them to a serving platter. Garnish with freshly chopped parsley before serving.
