For the Crust:

1 ½ cups graham cracker crumbs (or phyllo dough for a more traditional touch)

½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon ground cinnamon

For the Cheesecake Filling:

24 oz (3 packs) cream cheese, softened

¾ cup granulated sugar

¾ cup Greek yogurt

3 large eggs

1 teaspoon vanilla extract

½ teaspoon almond extract

½ cup honey

For the Honey Pistachio Topping:

1 cup shelled pistachios, finely chopped

¼ cup honey

2 tablespoons unsalted butter

1 teaspoon cinnamon

¼ teaspoon nutmeg

Additional whole pistachios for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (163°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined and crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10-12 minutes or until golden. Set aside to cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the granulated sugar, mixing until well combined.

                - Add in the Greek yogurt, and mix until incorporated.

                  - Beat in the eggs, one at a time, mixing well after each addition.

                    - Stir in the vanilla extract, almond extract, and honey until fully incorporated.

                      Assemble the cheesecake:

                        - Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

                          - Tap the pan gently on the counter to remove any air bubbles.

                            Bake the cheesecake:

                              - Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly (it will firm up while cooling).

                                - Once done, turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracks.

                                  Prepare the honey pistachio topping:

                                    - In a small skillet over medium heat, melt the butter. Stir in chopped pistachios, honey, cinnamon, and nutmeg.

                                      - Cook for 3-4 minutes, stirring continuously, until the pistachios are toasted and evenly coated.

                                        Cool and serve:

                                          - Once the cheesecake has cooled to room temperature, refrigerate for at least 4 hours, preferably overnight.

                                            - Before serving, top with the honey pistachio mixture and garnish with whole pistachios.
