1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

1/2 cup honey

3 tablespoons mayonnaise

1 tablespoon sweetened condensed milk

1 tablespoon lemon juice

Green onions, sliced, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Walnuts: In a pan, add 1 cup of walnuts and enough water to cover them. Bring to a boil, then drain. Add the walnuts back to the pan with 1/2 cup of sugar and 1/2 cup of water. Cook on medium heat, stirring, until the syrup thickens and coats the walnuts. Remove from heat and let cool on parchment paper.

    Prepare the Batter: In a large bowl, mix the cornstarch, flour, salt, and pepper. In another bowl, combine the eggs and milk. Dip the shrimp first in the cornstarch mixture, then into the egg mixture, and back into the cornstarch for double coating.

      Fry the Shrimp: In a deep skillet, heat vegetable oil over medium-high heat (about 350°F). Fry the shrimp in batches until golden brown and crispy, around 2-3 minutes per side. Use a slotted spoon to remove shrimp and place them on paper towels to drain excess oil.

        Make the Sauce: In a separate bowl, whisk together honey, mayonnaise, condensed milk, and lemon juice until smooth.

          Toss and Serve: In a large mixing bowl, combine the fried shrimp with the honey sauce until well coated. Add the candied walnuts, tossing gently to combine.

            Garnish and Serve: Transfer the honey walnut shrimp to a serving platter. Garnish with sliced green onions and sprinkle sesame seeds on top for a lovely finish.
