Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup walnuts

1/2 cup all-purpose flour

1/2 cup cornstarch

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cold sparkling water

1/4 cup mayonnaise

1/4 cup honey

1 tablespoon sweetened condensed milk

1 tablespoon lemon juice

2 tablespoons vegetable oil (for frying)

Chopped green onions and sesame seeds for garnish

Instructions

Prepare the Walnuts: Start by preheating your oven to 350°F (175°C). Spread the walnuts on a baking sheet in a single layer and toast them in the oven for about 8-10 minutes, or until they turn golden brown. Keep an eye on them to avoid burning. Once done, remove from the oven and set aside.

Make the Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water while whisking until the mixture is smooth and well combined. The batter should be thick but pourable.

Fry the Shrimp: Heat the vegetable oil in a large frying pan over medium-high heat. Dip each shrimp into the batter, allowing any excess to drip off before carefully placing them in the hot oil. Fry in batches, being careful not to overcrowd the pan, for about 2-3 minutes or until the shrimp are golden and crispy. Remove from the oil and drain on paper towels.

Prepare the Sauce: In a separate bowl, whisk together the mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth and creamy. Adjust the sweetness to your liking by adding more honey if desired.

Combine: In a large mixing bowl, gently toss the fried shrimp with the creamy honey sauce until well coated. Then, add the toasted walnuts and toss again to combine everything evenly.

Serve: Plate the honey walnut shrimp and garnish with chopped green onions and a sprinkle of sesame seeds for an extra touch. Serve warm over steamed white rice or alongside a fresh salad for a delightful meal. Enjoy!
