Italian Chicken, Potato, and Green Bean Bake

4 boneless, skinless chicken breasts

3 medium-sized potatoes, sliced thinly (about 1/4 inch thick)

2 cups fresh green beans, trimmed

1 medium onion, thinly sliced

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juice

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

¼ cup olive oil

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the sliced potatoes, green beans, onions, and minced garlic. Drizzle with olive oil, and season with salt, pepper, and Italian seasoning. Toss until the vegetables are well coated.

      Layer the Bake: In a greased large baking dish, spread half of the potato and green bean mixture at the bottom. Lay the chicken breasts on top, then season the chicken with salt, pepper, and red pepper flakes if using. Pour the diced tomatoes (with juice) over the chicken, ensuring even coverage.

        Add the remaining vegetables: Top the chicken with the rest of the potato and green bean mixture. Make sure the veggies are distributed evenly.

          Cheese it Up: Sprinkle the grated Parmesan cheese generously over the top layer.

            Cover and Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.

              Remove the foil: After 30 minutes, carefully remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.

                Garnish and Serve: Once cooked, remove from the oven and let it rest for about 5 minutes. Garnish with fresh basil leaves before serving.
