½ cup coconut flour

¾ cup erythritol (or preferred keto sweetener)

1 tsp baking powder

½ tsp baking soda

4 large eggs

½ cup unsalted butter, softened

½ cup unsweetened Greek yogurt

1 tbsp lemon zest (from about 2 lemons)

¼ cup fresh lemon juice

1 tsp vanilla extract

Optional: powdered erythritol for dusting

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and line a standard loaf pan (9x5 inches) with parchment paper.

    Mix Dry Ingredients: In a medium-sized mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, baking soda, and salt until well combined. This will ensure an even distribution of the leavening agents.

      Prepare Wet Ingredients: In a large mixing bowl, beat the softened butter with an electric mixer until creamy and fluffy, about 2-3 minutes. Gradually add in the eggs, one at a time, beating well after each addition. Next, mix in the Greek yogurt, lemon zest, lemon juice, and vanilla extract until fully incorporated.
