2 cups cooked chicken, shredded (rotisserie chicken works great!)

1/2 cup barbecue sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup corn (canned or frozen, thawed)

1/4 cup red onion, finely chopped (optional)

1/4 cup fresh cilantro, chopped (optional)

Olive oil or cooking spray for greasing the pan

Sour cream or ranch dressing for dipping (optional)

Instructions
 

Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken with the barbecue sauce. Mix well until the chicken is fully coated. If desired, add corn, red onion, and cilantro for additional flavor and texture.

    Assemble the Quesadillas: Lay out two flour tortillas. On one half of each tortilla, sprinkle a generous layer of shredded cheddar and mozzarella cheese, followed by a scoop of the BBQ chicken mixture. Top with another layer of cheese and fold the tortillas in half.

      Cook the Quesadillas: Heat a large skillet or griddle over medium heat. Lightly grease with olive oil or cooking spray. Carefully place the folded quesadillas on the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy.

        Flip and Finish: Carefully flip the quesadillas using a spatula. Cook for an additional 3-4 minutes on the other side until golden brown and the cheese has melted. Repeat with remaining quesadillas.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges. Serve with sour cream or ranch dressing for dipping, if desired.
