Ingredients

1 lb ground turkey

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup marinara sauce (for serving)

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare Spinach: If using fresh spinach, rinse it thoroughly, remove any tough stems, and chop it finely. If using frozen spinach, make sure it’s completely thawed and drained of excess water.

Mix Ingredients: In a large mixing bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, dried oregano, dried basil, and a pinch of salt and pepper.

Combine Thoroughly: Using your hands, mix all the ingredients together until well combined. Be mindful not to overmix, as this can make the meatballs tough.

Shape Meatballs: Scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the meatballs on the prepared baking sheet. Continue this process until all the mixture is formed into meatballs, ensuring they are evenly spaced on the tray.

Bake Them: Place the tray in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside. An internal temperature of 165°F (74°C) is ideal.

Serve: While the meatballs are baking, warm the marinara sauce in a small saucepan. Once the meatballs are ready, serve them with the marinara sauce on the side for dipping. Garnish with fresh basil leaves, if desired.

Enjoy: These turkey and spinach meatballs are perfect for little hands and can be served over pasta, in a sub roll, or simply on their own for a healthy snack!
