Ingredients

200g Kit Kat bars (reserve some for topping)

250g digestive biscuits

100g unsalted butter, melted

600g cream cheese, softened

200g powdered sugar

200ml heavy whipping cream

1 tsp vanilla extract

2 tbsp cocoa powder

Pinch of salt

Optional: Chocolate shavings for decoration

Instructions

Prep the Base: Preheat your oven to 350°F (175°C). Crush the digestive biscuits into fine crumbs in a food processor. Add the melted butter and pulse until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then let it cool completely.

Prepare the Filling: In a large mixing bowl, combine the softened cream cheese and powdered sugar. Beat with an electric mixer until smooth and creamy, about 3 minutes.

Add Whipping Cream: In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. Fold the whipped cream gently into the cream cheese mixture, ensuring no lumps remain.

Integrate the Kit Kats: Take your Kit Kat bars (keeping a few for decoration) and chop them into small pieces. Fold these into the cream cheese mixture along with the cocoa powder and a pinch of salt, mixing gently until evenly distributed.

Combine the Layers: Pour the cheesecake filling over the cooled biscuit crust and smooth the top with a spatula.

Chill the Cheesecake: Cover the springform pan with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to let it set properly.

Garnish and Serve: Once set, carefully remove the cheesecake from the springform pan. Top with reserved chopped Kit Kats and chocolate shavings if desired. Slice and serve chilled.
