1 lb ground beef (80% lean)

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon ginger, minced

¼ cup soy sauce

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 teaspoon chili paste (gochujang or sriracha for heat)

3 green onions, chopped (whites and greens separated)

1 cup cooked rice (jasmine or short-grain)

1 cup steamed broccoli (or any preferred stir-fry vegetable)

2 teaspoons sesame seeds

Salt and pepper to taste

Optional: Kimchi or pickled vegetables for serving

Cook the Ground Beef: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if needed.

    Add Aromatics: Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

      Make the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, and chili paste. Pour this mixture over the cooked beef, stirring to combine. Let it simmer for about 3-5 minutes until the sauce slightly thickens.

        Incorporate Green Onions: Add the white parts of the chopped green onions to the beef mixture and stir until they are softened, about 1-2 minutes. Season with salt and pepper to taste.
